Join me for an online cooking class where you’ll cook alongside me to make a complete dinner:
Learn to make your own green enchilada sauce (which also doubles as a grilling marinade), how to get the most flavor out of ground beef, and two quick toppings to pump up all your future taco nights.
- Beef and Black Bean Enchiladas Verdes (Can sub beef for any ground meat if you prefer.)

Kids welcome! We will be practicing our knife skills and tackling some introductory kitchen skills that are perfect for all ages.

A note on cultural competency: I am not, and would never claim to be, an expert on Mexican cuisine. In this class, I approach the recipes from the perspective of getting the most flavor with the simplest ingredient list and in a weeknight meal time-frame, how to make a meal with the flavors I love from Mexican cuisine when cooking in a middle-American kitchen and with ingredients from a mainstream U.S. grocery store. I will also give background and history on enchiladas’ origins.
